One of things I try to save money on is food, which is much easier than it sounds. Sticking to a meal plan and using a shopping list can do wonders for your bank account. But I have another trick up my sleeve. Soup. Soup is a great meal option for lunch or dinner and is a great way of sneaking all those veggies in. Back in the day, making soup was a chore. Luckily, it’s not anymore and is easier than ever to make soup at home. I use the Morphy Richards Saute and Soup Maker but there are a ton of options out there to make your life easier, just check out Amazon.
The great thing about this Carrot and Ginger Soup recipe is that it is vegan, but still delicious. And I’m sure, once you have seen how easy it is to make soup with you’re new soup maker, you’ll be hooked as well.
4-6 bowls of soup
Prep Time: 10 minutes
Cooking Time: 21 minutes
- 500g Carrots
- 150g Onion (Peeled and Chopped)
- 1 Root Ginger Bulb (Up to about 3 – 4 Inches Long. Peeled and chopped.)
- 1 teaspoon Salt
- 1l Vegetable Stock
To get the most zing from your ginger, lightly saute it alongside the onions using the saute function on your soup maker. This doesn’t take long, and you must ensure that the onions don’t start to colour.
Add all the ingredients into your soup maker, give it a mix, and set the soup maker to smooth.
Wait 21 minutes, and serve. Soup maker’s really are as easy as that.
